Luscious Red Salad with Citrus Vinaigrette

I love fruits in my salads. This made for a delicious dinner with a side of good garlic bread.










2/3 cup dried cranberries(I used Pomegranate Juice infused ones! IF in season, pomegranate arils are a fantastic addition or replacement!!)
2 red apples, diced *
2 cups sliced strawberries
1 diced red bell pepper

Amounts to taste:
diced turkey
shredded carrots
shredded zucchini
greens(I used spring mix)
feta cheese
any other veggies you see fit, stick to mild ones so they don't compete with the fruit mix though!

Citrus Vinaigrette:

2 TB zest of orange
1 TB zest of lemon
Juice of 2 large oranges
Juice of 1 medium lemon
1 TB minced white onion
2 TB apple cider vinegar
2 tsp brown sugar
1 clove garlic, finely minced
1/2 tsp dry mustard
salt and pepper to taste
1/4 cup olive oil

in a blender place juices, zests and remaining ingredients except the olive oil, blend on low,















turn up the speed and slowly drizzle in the olive oil until fully infused.

Place in a jar with a tight lid and allow the flavors to mingle for at least an hour. Shake well before using.













* to keep apples from browning immerse in a mixture of 1 TB lemon juice to 1 cup water immediately after slicing, drain well.

Gently mix together the cranberries, apples, strawberries and red bell pepper, set aside.





On a plate arrange greens, turkey and veggies as desired. Top with a scoop of the fruit mixture, sprinkle with feta and drizzle with citrus dressing.
