Baked Apple and Cheese Omelette Roll

No one was really hungry this evening so I was trying to come up with something lite. I don't really know what sparked this idea but with google's help I found a few seeds that sprouted into a delicious meal.




8 eggs
1/4 cup half and half
2 medium apples(preferably tart ones)
1 TB lemon juice
1 TB butter
pinch of cinnamon
pinch of allspice
1/4 cup onion, minced well
1 cup sharp cheddar cheese
1 cup baby spinach, torn into small pieces


Preheat oven to 350 and Grease a rimmed cookie sheet or jelly roll pan.

In a large bowl beat eggs with half and half until light and fluffy.









Pour eggs into pan and bake for 20 minutes until the eggs are well set.










While the eggs are cooking heat 1 TB butter in a large pan over medium heat, add apples, lemon juice, onion, cinnamon and allspice. 
Cook until the apples are tender crisp and just starting to brown. 






Remove from heat and add spinach, stirring  to wilt slightly.











When the eggs are done gently spread the apple mixture over the surface. Sprinkle with 1/2 the cheese. Starting with the short end roll up VERY gently.






Top with remaining cheese 









Place it back in the oven to melt the cheese...











Allow to cool for a few moments before slicing.
