Beef Stew with Gluten Free Apple Dumplings

I hadn't planned on putting this on but it was so delicious I had to! I found it in an old e-cookbook of mine and I modified it how I knew we would like it.
*non gf dumpling modification included






2-3 lb bottom round, sliced into bite sized chunks
1/2 cup cornstarch
1 tsp dried parsley
1/2-1 tsp seasoned salt
1/2 tsp garlic powder
1/2 tsp onion powder

1 medium onion, chopped
4 medium carrots, chopped
2 stalks celery, chopped
2 cloves garlic, minced
2 beef bullion cube dissolved in 1 cup water
1 cup apple juice
2 TB cider vinegar
1 TB oregano
2 tsp basil
1/2 tsp red pepper flakes
salt and pepper to taste

(Next time I think I would also add a can of diced tomatoes with the juice and some frozen green beans too)

Apple Dumplings:
1 cup applesauce
2 eggs, beaten well
1 1/3 cup sorghum flour*
1/2 cup potato starch*
6 TB tapioca starch*
2 tsp baking powder*
1/2 tsp xanthan gum*
1/2 tsp salt

In a seal-able bag mix the cornstarch and seasonings...add beef and seal, shake well until the beef is well coated.

Place in a slow cooker
Add remaining stew ingredients, cover and cook on low 6-8 hours, high 4-6....

About 30-45 minutes before you plan to eat start the dumplings (set crock pot to high at this point)

*replace starred ingredients with 2 cups all purpose flour for non-gluten free if you like

Mix applesauce and eggs, set aside

In a bowl combine the dry ingredients, mix well.

Add the applesauce mixture to the dry ingredients and mix until everything is incorporated.


Drop by large spoonfuls onto the hot liquid of the stew, cover and allow to cook 20-30 minutes or until cooked through.
