Pumpkin Pie Bread with Fresh Pumpkin Puree

I was sick last week so pumpkin carving got put off to the last minute. We never did get around to carving our last pumpkin so rather than let it go to waste I chopped it up for more puree! I should be set for the winter with puree! LOL

So I started thinking of pumpkin things to make. First on the list Pumpkin Pie Bread!!




3 1/2 cups all purpose flour
2 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp cloves
1/2 tsp salt
1 cup brown sugar
1 cup white sugar
3/4 cup butter, softened
4 eggs
2 cups pumpkin puree
1 tsp vanilla extract
1/2 cup water

Preheat oven to 350 and grease 2 9x5 loaf pans

Mix flour-salt ingredients in a large bowl, set aside












In another bowl beat together sugars and butter until creamy











add in eggs one at a time and beat well












add in pumpkin and vanilla, combine well.












Mix in flour mixture alternately with water until every thing is mixed in.










Divide batter between loaf pans










bake in the preheated oven for 60-70 minutes until a toothpick inserted in the center comes out clean.












 Allow to cool in pans for 10 minutes, remove to wire racks to cool completely.
For very best flavor wrap in plastic wrap and allow to sit overnight at room temperature before serving.
