Lemon Meringue Pie Ice Cream

Lemon Meringue Pie Ice Cream....what could be better?? We are a family of lemon fanatics when I came across a recipe I decided to play around and create my own!
If you can make the homemade graham crackers and marshmallows it makes it that much better!
I also used it in my Lemon Meringue Pie Ice Cream Cake!


1.5 cups sugar*
3/4 cup FRESH lemon juice*
3 eggs, beaten*
2 tsp lemon Zest*
2 TB butter*
1.5 tsp vanilla
1.5 cups half and half(milk is perfectly fine as well)
1.5 cups heavy whipping cream
3/4 cups coarsely crushed graham crackers
3/4 cup mini marshmallows



In a double boiler over simmering water(medium heat) combine sugar and  lemon juice stir until the sugar is dissolved , add in beaten eggs and continue to whisk over the heat for 12-15 minutes until it is nice and thick. Add in butter and zest and cook 2 minutes more.
Remove from heat and allow to cool for a few minutes.





In a bowl combine half and half, heavy cream and vanilla
Slowly add in the cooled lemon mixture and blend gently.
Chill in the fridge for at least 4-6 hours(overnight is best).









Freeze in your ice cream maker per manufacturers instructions

* 1 1/4 cup prepared Lemon Curd can be substituted for these ingredients/steps
